Tacos are such an easy meal to make and easy is what you want most mornings, especially camping. And so there are breakfast tacos. The only necessary cooking involved is the eggs, but lightly frying your tortillas will make the tacos taste just that much better!
This trip we went down to Horning’s Hideout in Oregon. It’s a pretty nice campground that has 3 disc golf courses and peacocks! Even some teeny baby peacocks! SO CUTE!
While I try to cook as much as I can over a fire, there was a fire ban on while we were down, and so the trusty camp stove came out. A camp stove is definitely easier to cook with but no where near as much fun.
Crack some eggs into your pan and carefully whisk them together. Add any veggies or seasonings you want! I went fairly simple with diced onion, chili flakes, salt and pepper. Cook the eggs slowly over low heat, stirring frequently until done.
While the eggs are cooking fry your tortillas in another pan. A minute each side is plenty. Just enough for them too poof up in places and get some brown spots. Again, this step is optional but it makes even the worst tortillas taste amazing.
And that’s it! Cooking is done. Assemble your tacos with whatever toppings you’d like. This round was some beans, cheese, avocado and salsa. It was a super filling breakfast that powered us through our disc golfing day.

- 12 eggs
- 1/2 small onion diced
- 1 tsp chili flakes
- salt and pepper
- 12 flour tortillas
- 1 can black beans
- avocado, cheese, salsa
Ingredients

- Crack the eggs into a pan and gently whisk together. Add the diced onion and season with salt, pepper and chili flakes.
- Cook eggs over a low flame (stove or campfire), stirring frequently until cooked through.
- In another pan on low flame fry the flour tortillas for a minute or so on each side. Enough to get a few char marks on them.
- Assemble your tacos! Eggs, cheese, black beans, salsa, avocado, anything you want!
