Fire cooked fries are so delicious! They’re warm, crispy, and have a nice little smoky flavour. Topped with chili and shredded cheese they are elevated to a hearty camp supper that’ll warm you to your bones. And it comes together so easily!
If you wanted to go super gourmet with them it’s definitely possible to hand cut your own fries and cook up a batch of your favourite chili before heading out on your camp journey. But for this trip a bag of frozen fries and a can of chili worked just fine!
Spread your fries out over a tin foil pan. Coat with olive oil and your choice of seasoning. For this batch I went with habenero salt, pepper and ground dried garlic and chili flakes.
Place the pan on a cooking rack over the fire. Let cook until brown and crispy. About 20-30 minutes. If you’re using some homemade chili, throw it in a camp pot and heat it up next to the fries. If you’re going the can route just open the can, remove the paper and it’s ready to heat up. Easy peasy!
Once the fries are cooked add the cheese! Leave it over the fire a few minutes longer until the cheese is nice and melted.
Remove fries and chili from the fire and divy it up over 2 plates. Top with any remaining cheese and whatever other garnishes you would like. Next time I make this I’m definitely bringing some sour cream, avocado and fresh jalapeno!
Curl up in your camp chair with a beer and your nice warm meal and enjoy!

- 1 lb straight cut fries frozen or fresh cut
- 16 oz chili canned or homemade
- 2 cups shredded cheese
- 4 Tbsp olive oil
- seasoning of choice salt, pepper, garlic, chili flakes

- Spread fries out on a tinfoil tray. Pour olive oil all over and liberally season with your choice of spices.
- Place fries on a grill over a strong cooking fire. Let cook until brown and crispy, 20-30 min, flipping frequently.
- While fries are cooking, heat the chili alongside. Open the can (don’t forget to pack the can opener!), remove the paper and place next to the fries on the grill. Stir occasionally.
- Once fries are cooked sprinkle 3/4 of the cheese over top and allow to melt. Remove it all from the fire and it’s time to plate up.
- Divy up the cheesy fries on to two plates. Top with the warmed chili and remaining cheese.
- Add any extra garnishes you want. Avocado, sour cream, fresh jalapeno rings and cilantro are all great options.
