Pancakes 3 Ways
A basic batter and 3 ways to customize it! Cook them over a fire and it’s a great way to start your day.

Pre Camp Prep
  1. Whisk the flour, baking powder, sugar and salt together in a bowl
  2. Whisk the milk, egg and butter in a larger bowl
  3. Pour dry ingredients into wet, stir to combine. Be careful not to overmix the batter.
  4. Pour batter into either a plastic container or heavy duty sealable bag. Store in the cooler until breakfast time!
  5. Melt 2 Tbsp of butter and combine it with the brown sugar and cinnamon in a little squeeze bottle. Store alongside pancake batter.
Pancake Time
  1. The butter in the brown sugar, cinnamon mix will have solidified by now. To melt it again throw the squeeze bottle into some hot water. Fish it out with tongs once the butter is melted.
  2. Heat a pan over your fire and melt a bit of butter
  3. Pour pancake batter into pan. The batter should start to bubble a little bit. Cook until when the bubbles pop the holes stay open.
  4. At this point add you choice of toppings. Sliced bananas, chocolate chips or a swirl of cinnamon sugar.
  5. Flip pancake and cook until done.
  6. Serve topped with some more butter and a generous drizzle of maple syrup.
Recipe Notes

We’ve always got a pot of hot water going for coffee or tea in the morning. We used that to melt the cinnamon sugar mix.

If you don’t want to worry about re-melting the butter use you can use a light oil such as canola instead. It’ll change the flavour a bit but with enough maple syrup and butter on top it shouldn’t be noticable.
